Ingredients

- 400g Raw King Prawns — peeled
Fresh
- 200g Feta Cheese — block
- 2 Garlic Cloves — crushed
Pantry
- 400g Chopped Tomatoes — tinned
- 5g Dried Oregano
- 20ml Ouzo — optional but recommended
Method

Preheat oven to 200°C. Crush garlic. Mix tomatoes, garlic, oregano, and ouzo in a baking dish.

Scatter the prawns on top of the tomato sauce in the baking dish.
Don't stir the prawns in — they cook better sitting on top of the sauce.

Crumble the feta cheese over everything in large chunks.

Bake at 200°C for 15–20 minutes until the prawns are pink and curled, and the feta is golden brown on top.

Serve straight from the baking dish with crusty sourdough for mopping up the juices, or spooned over orzo.
